Shui Xian is a very popular variety of Oolong tea and one the common favorites among Gong Fu tea drinkers. It is grown in the northwest region of Fujian Province. The rocky cliffs of the Wuyi mountains are home to China’s revered yan cha or ‘rock oolong’ teas. These teas are made from sub-varieties of Camellia sinensis that are indigenous to this region and nowhere else in China.
Shui Xian has a majestic appearance that suggests that the liquor will be a heady cup. These are teas to be taken seriously. The leaves are long, broad, flat and slightly twisted, and have a rich, dark color from a high degree of oxidation. Traditional Wuyi mountains Shui Xian oolongs are finish-fired or roasted over a low temperature charcoal fire. The roasting adds an extra layer of complexity to an already delicious tea. The first two brews highlight the roast itself, with pronounced notes of toast and nutty flavor. The true character of the tea reveals itself on subsequent brews: strong, smoother full body mouthfeel with a refreshing sweet aftertaste.
We are proud to offer 3 different grades selection of Shui Xian teas to our tea enthusiasts who seek unique well-defined, mature tastes and who are eager to experience the multiple infusions possible from these teas when steeping them Asian style. They are delicious and we blend them acccording to traditional and historic tea formulas to bring the elements of flavor and style of unique teas together to create new synergies of taste – teas that will be more balanced, complex.
