High Mountain Fancy Oolong is surprisingly delicious and complex. It is grown in one of the traditional tea plantations in the High Mountain of Anxi County in southern Fujian. The tea maker skillfully reproduces the style of Taiwan High Mountain Oolong tea making method to reproduce this wonderful tea.
Our tea is a first flush tea and gathered in early November. The combination of lower-than-average temperature, short sun exposure in the morning and cooler mist-enshrouded afternoons creates an environment that slows plant metabolism. This allows more nutrients to be absorbed so that more complex flavor compounds are created and stored. As a result, the mouthfeel is smooth and full. Taste and aroma changes through the life span of each brew, beginning with a creamy texture and finishing with a hint of a mixture of gardenia and lemon taffy.
